Sweet Potatoes w/Sea Salt
- 4 small-medium sweet potatoes (Tip: The redder the sweet potato the better)
- Sea Salt
- Fresh ground black pepper

Oven method: Line a baking pan with aluminum foil or parchment paper for easy cleanup. Place sweet potatoes on pan and bake about 1 hour until potatoes are soft to the touch.
Microwave method: Prick skins all over with a fork. Place on a microwave safe plate and microwave 8-10 minutes turning over halfway through cooking time. Microwaves vary and size and number of potatoes will effect cooking time. Adjust accordingly. Potatoes are done when soft to the touch.
Cut hot potatoes in half, and using a knife, make several slits across the grain of the potatoes. This will eliminate strings in the mash. Safety Tip: Use a clean paper towel to hold hot potatoes while handling. Scoop potato from each half into a serving bowl and season to taste with butter, sea salt and fresh ground black pepper.
Sweet Variation: Season with butter and garnish with raisins or dried cranberries and toasted pecans or walnuts.
