Pumpkin Chili
Ingredients
- 2# Ground turkey
- 4-5 cups water or chicken broth
- 2-3 T. “Better than Bouillon” Chicken Base
- 1 chopped green pepper or 1 cup frozen diced
- 1 medium onion chopped or 10 oz. bag frozen diced
- 2 whole carrots peeled and diced (you can puree in food processor if you don’t want to see pieces of carrots in your chili
- 3 cloves of fresh garlic
- 15 oz. can petite diced tomatoes
- 2 bay leaves (I prefer Turkish bay leaves - available online)
- 15 oz. can pure pumpkin ( be careful and do not buy pumpkin pie filling)
- 1/2 t. cumin
- 3-5 T mild chili powder (I prefer Gebhart’s - available online)
- 1/2 t. black pepper
- 1/2 t. dried oregano leaves

Instructions
- Brown ground turkey
- Add water/broth, bouillon, garlic, onions, bell pepper, carrots, diced tomatoes, and bay leaves and simmer until veggies are tender
- Add pumpkin and rest of spices and simmer for 10-15 minutes
- Serve garnished with your favorite condiments such as sour cream, shredded cheddar, chopped green onions, avocado, pico de gallo, and fresh chopped cilantro
