Parmesan Vinaigrette Salad-Serve with No Time 2 Cook Entrees
Simply Light and Delicious
This simple light Parmesan Vinaigrette Salad is the perfect accompaniment to one of our No Time 2 Cook entrees. The basic ingredients include oil, vinegar, and shredded parmesan cheese. Sour cream binds the dressing together and keeps the salad greens from wilting. To lighten it up, omit the sour cream, but serve immediately. Adjust the other ingredients to your personal taste, however I personally prefer the combination here in this recipe.

Dressing and Vegetables
The Parmesan Vinaigrette Salad dressing is also delicious drizzled over assorted fresh steamed vegetables as well as frozen vegetables. I keep a jar of this dressing in my fridge at all times and always have frozen vegetables ready to pull out for a quick meal. The dressing is lighter than butter and with a more complex flavor.
Try this dressing drizzled over crisp tender cold asparagus, then pull out to serve with sandwiches or for a quick veggie at dinnertime. Cold asparagus also makes an elegant cold appetizer on a buffet.
To steam fresh asparagus, bring a pot of water to a boil. Drop trimmed asparagus shoots into rapidly boiling water, bring back to a boil, and cook for about 1 minute. The cook time will be effected by the diameter of the asparagus shoots. If serving cold drop in an ice bath to stop cooking process. If serving hot, drizzle with dressing and serve immediately.

Salad Ingredients
- Salad greens of choice
- Grape or cherry tomatoes halved
- Sunflower seeds
- Fresh shredded Parmesan
- Fresh ground black pepper
Vinaigrette Dressing
- 4 oz. olive oil
- 3 oz. vegetable oil
- 1/2 c. white vinegar
- 1/4 c. sour cream
- 1 1/2 T Dijon mustard
- 1 T honey
- 2 t. fresh pressed garlic
- 1/2 t. sea salt
- 1 t. black pepper
- 3 T shredded Parmesan

Instructions
Vinaigrette Dressing: Combine all ingredients and whisk together
Salad: Combine greens, halved tomatoes, fresh Parmesan, and sunflower seeds. Drizzle desired amount of vinaigrette dressing over salad and toss. Garnish with a little more Parm and sunflower seeds. Grind fresh black pepper over entire salad. This salad can be prepared an hour before serving. Refrigerate unused dressing. This dressing is also great served over steamed vegetables such as asparagus, broccoli, cauliflower, and more. Also great drizzled over a baked potato.
