Kale Salad

  • 1/2 cup toasted almonds
  • 3 cups washed, trimmed, dried, and chopped kale leaves or a mix of Kale and your favorite greens
  • 1/3 c. fresh grated Parmesan cheese (Optional)
  • Paul Newman Oil and Vinegar Dressing

Toss all of the above together and serve immediately.  Note:  You can purchase toasted almonds or toast your own in an oven or microwave.   Stir often and when they give off a nutty aroma, they are ready.  In regard to the dressing, the Paul Newman dressing is just a suggestion, your favorite vinaigrette might do just as well.  When it comes to Kale, some may find Kale too strong for their personal preference.  If this is the case, try mixing with other greens for a milder flavor.
