Country Butter Beans
- 16 oz. package frozen Baby Lima Beans (In the South we call them butter beans)

- Completely cover the butter beans with water about ½ inch above the beans. This is key! Never let the water cook down below the level of the butterbeans. Bring them to a simmer, then add butter, salt, and pepper to taste. Cover and simmer until the butterbeans are just tender. Turn off fire, and allow to sit at least 15 minutes before serving.
- An added note: With all the great recipes I have in my box, butter beans cooked in the above method are the most requested dish I am asked to bring for family gatherings. Enjoy!!
