Country Butter Beans

  • 16 oz. package frozen Baby Lima Beans (In the South we call them butter beans)
  • Water
  • Butter
  • Salt
  • Pepper

  1. Completely cover the butter beans with water about ½ inch above the beans. This is key! Never let the water cook down below the level of the butterbeans. Bring them to a simmer, then add butter, salt, and pepper to taste. Cover and simmer until the butterbeans are just tender. Turn off fire, and allow to sit at least 15 minutes before serving.
  2. An added note: With all the great recipes I have in my box, butter beans cooked in the above method are the most requested dish I am asked to bring for family gatherings. Enjoy!!
